6 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss them with half of the olive oil, salt, and pepper.
Roast the asparagus for 12-15 minutes until tender and slightly charred.
While asparagus roasts, steam the cauliflower florets in a steamer basket over boiling water for 10 minutes until very soft.
Pat the salmon dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Drain the steamed cauliflower and transfer to a blender or food processor with the minced garlic and lemon juice.
Pulse until the cauliflower reaches a smooth, mash-like consistency.
