In a small bowl, whisk together the olive oil, minced garlic, chopped rosemary, thyme, lemon juice, lemon zest, sea salt, and black pepper.
Place the chicken breast and halved potatoes on the prepared baking sheet, then brush them thoroughly with two-thirds of the lemon-herb oil.
Roast in the oven for 15 minutes.
Remove the pan, add the asparagus to the empty space, and drizzle with the remaining herb oil.
Return the pan to the oven and roast for another 10 to 12 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are golden brown.
Let the chicken rest for 5 minutes before serving to ensure it stays juicy.
