8 oz pork tenderloin
1.5 cup carrots
1 tbsp extra virgin olive oil
2 clove garlic
1 tsp fresh rosemary
1 tsp fresh thyme

PREPARATION
Preheat your oven to 400°F (200°C) and prepare a rimmed baking sheet.
Toss the sliced carrots with 0.5 tbsp of olive oil and half of the sea salt and black pepper on the baking sheet.
Rub the pork tenderloin with the remaining 0.5 tbsp of olive oil, minced garlic, rosemary, thyme, and the rest of the salt and pepper.
Heat an oven-safe skillet over medium-high heat and sear the pork for 2 minutes on each side until a golden crust forms.
Transfer the skillet to the oven along with the carrots and roast for 12 to 15 minutes until the pork reaches an internal temperature of 145°F.
Remove from the oven and let the pork rest for 5 minutes on a cutting board before slicing into medallions.
