Preheat your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
In a shallow bowl, whisk the egg until smooth. In a second shallow bowl, combine the panko breadcrumbs, almond flour, parmesan cheese, garlic powder, oregano, sea salt, and black pepper.
Dredge the chicken breast into the egg wash, allowing any excess to drip off, then press firmly into the breadcrumb mixture until evenly coated on all sides.
Place the breaded chicken on the prepared baking sheet and lightly drizzle the top with extra virgin olive oil to help it crisp up.
Bake for 15-18 minutes, or until the crust is golden brown and the chicken reaches an internal temperature of 165°F.
Remove from the oven and spoon the marinara sauce over the center of the chicken, then top with the fresh mozzarella cheese.
Return to the oven for an additional 3-5 minutes until the cheese is bubbly and melted.
Garnish with freshly chopped basil and serve immediately while hot and crispy.
