Seared Salmon with Garlic Sautéed Spinach and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with garlic-sautéed spinach, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Salmon Fillet
150g Sweet Potato
2 cups Fresh Spinach
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Boil sweet potato cubes until tender, then mash until smooth.
Pat the salmon fillet dry and season both sides with sea salt and black pepper.
Heat half the olive oil in a skillet over medium-high heat and sear the salmon skin-side down until crisp.
Flip the salmon and cook for another 2-3 minutes until opaque, then remove from the pan.
Add the remaining oil and minced garlic to the same skillet, sautéing for 30 seconds.
Toss in the spinach and cook until just wilted, then serve immediately alongside the salmon and mash.
