Garlic Mashed Potatoes with Chives and Seared Chicken
Pan-seared chicken breast served over creamy, garlic-infused mashed potatoes finished with a sprinkle of fresh, vibrant chives.
INGREDIENTS
5 oz Chicken breast
1 medium Russet potato
0.25 cup Nonfat Greek yogurt
0.5 tbsp Ghee
2 cloves Garlic
1 tbsp Fresh chives
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
PREPARATION
Peel and cube the potato, then boil in a pot of water for 12 to 15 minutes until fork-tender.
Season the chicken breast evenly with half of the sea salt and black pepper.
Heat olive oil in a skillet over medium-high heat and sear the chicken for 6 minutes per side until golden and cooked through.
While the chicken cooks, mince the garlic and lightly sauté in ghee in a small pan until fragrant and softened.
Drain the potatoes and mash thoroughly in a bowl with the Greek yogurt, sautéed garlic ghee, and the remaining salt and pepper.
Fold half of the finely chopped chives into the mashed potatoes until well combined.
Slice the chicken breast into strips and serve atop the buttery mashed potatoes, garnishing with the rest of the chives.
