6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Nonfat Greek Yogurt
PREPARATION
Steam the cauliflower florets and the peeled garlic clove together until the cauliflower is very tender, about 10-12 minutes.
While cauliflower steams, place the asparagus in a steamer basket over boiling water and steam for 3-5 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season lightly with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Place the salmon skin-side down (if applicable) and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
