Teriyaki Chicken and Broccoli Stir-Fry
Sautéed chicken breast and crisp broccoli florets tossed in a savory ginger-garlic glaze and served over a bed of fluffy brown rice.
INGREDIENTS
5 oz Chicken breast
1.5 cup Broccoli florets
0.5 cup Red bell pepper
0.5 cup Cooked brown rice
2 tbsp Coconut aminos
1 tsp Honey
1 tsp Fresh ginger
1 clove Garlic
1 tsp Toasted sesame oil
1 tsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Sesame seeds
PREPARATION
Cut the chicken breast into bite-sized pieces and season with sea salt and black pepper.
Heat the avocado oil in a large skillet or wok over medium-high heat.
Add the chicken to the skillet and sauté until golden brown and cooked through, about 5-7 minutes, then remove and set aside.
In the same skillet, add the broccoli florets and sliced red bell pepper with a tablespoon of water; cover and steam for 2 minutes until vibrant and tender-crisp.
While the vegetables steam, whisk together the coconut aminos, honey, grated ginger, and minced garlic in a small bowl.
Return the chicken to the skillet, pour the sauce mixture and toasted sesame oil over the ingredients, and toss for 1-2 minutes until the sauce thickens and coats everything.
Serve the stir-fry over the warm cooked brown rice and garnish with sesame seeds.
