Seared Salmon Fillet with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed broccoli and creamy garlic-mashed cauliflower, finished with a squeeze of bright lemon.
INGREDIENTS
5.5 oz Salmon Fillet
1.5 cups Broccoli florets
1.5 cups Cauliflower florets
1 tbsp Ghee
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the broccoli florets to the steamer basket until tender-crisp and vibrant green.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with a small amount of ghee or avocado oil spray.
Place the salmon skin-side down in the hot pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
Remove the steamed cauliflower and place in a food processor or bowl; add the remaining ghee, minced garlic, and a pinch of salt.
Blend or mash the cauliflower until smooth and creamy.
Plate the garlic mashed cauliflower and steamed broccoli alongside the seared salmon, finishing with a fresh squeeze of lemon juice.
