0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Heat the olive oil in a small skillet over medium heat and sauté the diced white onion until translucent, about 3-4 minutes.
In a medium mixing bowl, combine the cooked shredded chicken, sautéed onion, diced green chiles, cumin, garlic powder, sea salt, and black pepper.
Cut the corn tortillas into 1-inch wide strips.
Spread 2 tablespoons of the green enchilada sauce on the bottom of a small oven-safe baking dish.
Layer half of the tortilla strips over the sauce, followed by the chicken mixture, and then another layer of the remaining tortilla strips.
Pour the remaining green enchilada sauce evenly over the top and sprinkle with the shredded Monterey Jack cheese.
