Drizzle the olive oil over the mixture and sprinkle with garlic powder, smoked paprika, sea salt, and black pepper, tossing until every piece is well coated.
Spread the vegetables and protein in a single layer on the prepared baking sheet and roast for 25 minutes, tossing halfway through, until the tofu is crispy and the broccoli edges are browned.
While the vegetables roast, whisk together the tahini, lemon juice, and nutritional yeast in a small bowl, adding a tablespoon of warm water at a time until the sauce is smooth and pourable.
Place the fresh spinach in the base of a large bowl and pile the hot roasted tofu and vegetable mixture on top to slightly wilt the greens.
Drizzle the creamy tahini dressing over the entire bowl and enjoy immediately.
