5 oz Ground beef
2 large Bell peppers
2 tbsp Brown rice
0.25 cup Tomato puree
0 tsp Olive oil
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F and lightly grease a baking dish.
Slice the tops off the bell peppers and remove the seeds and membranes.
Heat olive oil in a skillet over medium heat and sauté the diced onion and garlic until translucent.
Add the ground beef to the skillet and cook until browned, breaking it up into small crumbles.
Stir in the cooked brown rice, tomato puree, dried oregano, sea salt, and black pepper until well combined.
Spoon the beef mixture into the cavity of each bell pepper, pressing down gently to pack the filling.
Stand the peppers upright in the prepared baking dish and pour a small amount of water into the bottom of the dish.
Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
