100g Green Beans

PREPARATION
Peel and dice the sweet potato, then boil in water for 10-12 minutes until tender.
Drain the sweet potato and mash thoroughly until smooth, adding a splash of hot water if needed for consistency.
Trim the green beans and steam them for 3-4 minutes until they are bright green and crisp-tender.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with a pinch of salt and pepper, then place it skin-side down in the pan.
Sear the salmon for 4-5 minutes per side until cooked through and the surface is golden.
In the last 2 minutes of cooking the salmon, add the minced garlic and steamed green beans to the side of the pan to lightly sauté.
