PREPARATION
Place the halved onion and ginger under a broiler for 5-7 minutes until the surfaces are charred and blackened.
In a large stockpot over medium heat, toast the star anise and cinnamon stick for 2 minutes until fragrant.
Add the charred onion, ginger, and beef bone broth to the pot; bring to a boil, then reduce heat and simmer for 20 minutes.
While the broth simmers, cook the rice noodles in a separate pot of boiling water according to package directions, then drain and place in a large serving bowl.
Strain the broth to remove the solids, then stir in the fish sauce, sea salt, and black pepper.
