Once the grits are cooked, stir in the Greek yogurt and half of the grass-fed butter until fully incorporated and creamy.
While the grits finish, mince the garlic and slice the green onions.
In a medium skillet, melt the remaining half of the butter over medium-high heat.
Add the shrimp, garlic, smoked paprika, and black pepper to the skillet.
Sauté the shrimp for 2-3 minutes per side until they are pink, opaque, and slightly curled.
Spoon the creamy grits into a bowl and top with the garlic shrimp.
Garnish with fresh green onions and serve immediately.
