Cook the shrimp for 2-3 minutes per side until they are pink, opaque, and fully cooked through.
Once the grits have finished cooking, remove the saucepan from the heat and stir in the Greek yogurt until the texture is creamy.
Divide the creamy grits into serving bowls and top with the sautéed Cajun shrimp and vegetable mixture.
Garnish with freshly chopped parsley and serve immediately.
