2 tbsp Part-skim ricotta cheese
0.5 oz Part-skim mozzarella cheese
1 cup Baby spinach
0.25 cup Yellow onion
1 clove Garlic
0.25 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
PREPARATION
Preheat your oven to 375°F and lightly grease a small individual-sized baking dish.
Cook the whole wheat lasagna sheet in boiling water until al dente, then drain and set aside.
Sauté the diced yellow onion and minced garlic in olive oil over medium heat until fragrant and translucent.
Add the ground beef, sea salt, black pepper, and dried oregano to the skillet, cooking until the meat is fully browned.
Stir the baby spinach into the beef mixture until wilted, then pour in the marinara sauce and simmer for 2 minutes.
Spread a thin layer of the meat sauce at the bottom of the baking dish, followed by half of the cooked lasagna sheet.
Dollop the ricotta cheese over the noodle, add the remaining beef sauce and the rest of the noodle, then top with mozzarella.
