Carne Asada Quesadillas with Guacamole
Seared flank steak strips and melted cheese folded into a toasted whole wheat tortilla, served with a creamy and vibrant fresh guacamole.
INGREDIENTS
3 oz Flank steak
0.5 medium Whole wheat tortilla
1 oz Part-skim mozzarella cheese
0.13 whole Avocado
1 tsp Lime juice
0.13 tsp Sea salt
0.13 tsp Black pepper
0.25 tsp Garlic powder
0.25 tsp Cumin
0 tsp Avocado oil
2 tbsp Nonfat Greek yogurt
PREPARATION
Season the flank steak evenly with sea salt, black pepper, garlic powder, and cumin.
Heat avocado oil in a cast-iron skillet over medium-high heat and sear the steak for 3-4 minutes per side until charred and cooked to your preference.
Remove the steak from the pan and let it rest for 5 minutes before thinly slicing against the grain.
In a small bowl, mash the avocado with lime juice and a pinch of salt to create a smooth guacamole.
Wipe the skillet clean and place the tortilla in the pan over medium heat.
Sprinkle half of the mozzarella on one side of the tortilla, layer the sliced steak, and top with the remaining cheese.
Fold the tortilla in half and cook for 2 minutes per side until the exterior is golden and the cheese is fully melted.
Slice the quesadilla into wedges and serve immediately with the fresh guacamole and a dollop of Greek yogurt.
