Herb-Baked Cod with Steamed Broccolini and Lemon Chickpea Mash
Cod fillets baked with fresh herbs, served over a creamy goat cheese chickpea mash with tender steamed broccolini and a zesty finish.
INGREDIENTS
5 ounces Cod Fillet
0.5 cup Canned Chickpeas
1 bunch Broccolini
0.5 ounce Soft Goat Cheese
2 teaspoons Extra Virgin Olive Oil
1 tablespoon Lemon Juice
1 clove Garlic
1 tablespoon Fresh Parsley
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Pat the cod fillet dry with a paper towel and season with salt, pepper, and half of the chopped fresh parsley.
Place the cod on the baking sheet, drizzle with one teaspoon of olive oil, and bake for 10 to 12 minutes until the fish is opaque and flakes easily.
While the fish bakes, place the broccolini in a steamer basket over boiling water and steam for 5 to 6 minutes until tender-crisp and bright green.
In a small bowl, mash the chickpeas using a fork or potato masher together with the goat cheese, minced garlic, lemon juice, and the remaining teaspoon of olive oil.
Stir the remaining fresh parsley into the chickpea mash and season with a pinch of sea salt to taste.
Spread the lemon chickpea mash onto a plate, place the herb-baked cod on top, and serve with the steamed broccolini on the side.
