Pour in the vegetable broth and add the roasted vegetable-tofu mixture, chopped apricots, and nutritional yeast.
Simmer the tagine for 10 minutes to allow the flavors to meld and the sauce to thicken slightly.
Stir in the lemon juice and garnish with fresh parsley before serving.
