PREPARATION
Preheat your oven to 400°F (200°C).
On a small parchment-lined baking sheet, toss the cherry tomatoes and minced garlic with 0.5 tablespoons of olive oil, a pinch of sea salt, and black pepper.
Roast the tomatoes for 12-15 minutes until they are soft and the skins begin to burst.
While the tomatoes roast, season the chicken breast with the remaining salt and pepper.
Heat the remaining 0.5 tablespoons of olive oil in a skillet over medium-high heat and sear the chicken for 5-7 minutes per side until fully cooked.
Place the cooked chicken on a plate and immediately top with the burrata cheese so it begins to soften from the heat.
Spoon the warm roasted tomatoes and their juices over the burrata.
