6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Asparagus spears
1 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Dill, chopped
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the woody ends off the asparagus and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side up and sear for 4-5 minutes until golden and crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Remove the steamed cauliflower and place in a food processor or blender with the ghee, minced garlic, and fresh dill. Pulse until smooth and creamy.
Steam the asparagus for 3-5 minutes until bright green and tender-crisp.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve the asparagus on the side with an optional squeeze of fresh lemon.
