7 oz Sockeye Salmon Fillet
150g Sweet Potato
100g Green Beans
1 tsp Avocado Oil
1 tbsp Lemon Juice
Sea Salt and Black Pepper to taste
PREPARATION
Peel the sweet potato and cut it into small cubes, then boil in a pot of water for 12-15 minutes until very soft.
While potatoes boil, place the green beans in a steamer basket over simmering water and steam for 5-7 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 3-4 minutes until a golden crust forms, then flip and cook for another 3 minutes until cooked through.
Drain the sweet potatoes and mash them thoroughly with the lemon juice until smooth and creamy.
