Seared Lean Beef Strips with Steamed Green Beans and Cauliflower Mash
Pan-seared sirloin strips served with tender steamed green beans and a creamy cauliflower mash, finished with a touch of roasted garlic.
INGREDIENTS
5.5 oz Lean Top Sirloin Strips
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Slice the sirloin into thin strips and season lightly with sea salt and cracked black pepper.
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or blender along with the Greek yogurt and minced garlic, processing until the mixture is smooth and velvety.
Heat the olive oil in a heavy-bottomed or cast-iron skillet over medium-high heat until shimmering.
Add the beef strips to the hot skillet in a single layer, searing for about 2 minutes per side until a golden-brown crust forms and they reach your desired level of doneness.
Plate a generous portion of the cauliflower mash alongside the steamed green beans and top with the seared beef strips.
