Garlic Parmesan Chicken Alfredo Pasta
Sautéed chicken breast and whole grain pasta tossed in a velvety garlic-parmesan yogurt sauce for a creamy and satisfying finish.
INGREDIENTS
4 oz Chicken breast
0.75 cup Whole grain penne pasta, cooked
0.25 cup Plain non-fat Greek yogurt
1 tbsp Grated parmesan cheese
1 tsp Olive oil
2 cloves Garlic
0.25 cup Low-sodium chicken broth
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh parsley
PREPARATION
Boil the whole grain pasta according to package instructions until al dente, then drain and set aside.
Season the chicken breast with half of the sea salt and black pepper.
Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown and cooked through, approximately 6 minutes per side.
Remove the chicken from the skillet, let it rest for a few minutes, then slice it into thin strips.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
Reduce the heat to low and whisk in the chicken broth, Greek yogurt, and parmesan cheese until the sauce is smooth and heated through.
Add the cooked pasta and sliced chicken back into the skillet, tossing gently to coat everything in the creamy sauce.
Garnish with fresh parsley and the remaining salt and pepper before serving warm.
