Ginger-Garlic Tofu with Blistered Green Beans
Crispy tofu cubes and snapped green beans are pan-seared until blistered and tossed in a fragrant, zesty ginger-garlic glaze.
INGREDIENTS
14 oz Extra firm tofu
0.5 cup Shelled edamame
1.5 cup Fresh green beans
1 tbsp Coconut aminos
1 tsp Toasted sesame oil
1 tbsp Fresh ginger
2 clove Garlic
0.25 tsp Red pepper flakes
1 tsp Honey
1 tsp Rice vinegar
0.5 tsp Sea salt
PREPARATION
Press the tofu for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a small bowl, whisk together the coconut aminos, honey, rice vinegar, and red pepper flakes.
Heat the toasted sesame oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the skillet and sear for 5-7 minutes until golden and crispy on all sides.
Remove tofu from the pan and add the green beans and edamame, sautéing for 4-5 minutes until the beans are blistered.
Stir in the minced ginger and garlic, cooking for 1 minute until fragrant.
Return the tofu to the skillet and pour the sauce over the mixture.
Toss everything together for 2 minutes until the sauce thickens and coats the ingredients evenly.
Season with sea salt and serve immediately.
