Carne Asada Quesadillas with Guacamole
Seared flank steak and melted mozzarella folded into a toasted corn tortilla, served with a dollop of creamy lime-infused guacamole.
INGREDIENTS
5 oz Flank steak
1 medium Corn tortilla
1.5 oz Part-skim mozzarella cheese
2 tbsp Avocado
0.5 tsp Lime juice
0.5 tsp Olive oil
0.25 tsp Ground cumin
0.25 tsp Garlic powder
0.13 tsp Sea salt
0.13 tsp Black pepper
1 tbsp Fresh cilantro
1 tbsp Red onion
PREPARATION
Rub the flank steak with ground cumin, garlic powder, sea salt, and black pepper on both sides.
Heat olive oil in a skillet over medium-high heat and sear the steak for 4 minutes per side until medium-rare.
Remove the steak from the heat and let it rest for 5 minutes before slicing thinly against the grain.
In a small bowl, mash the avocado with lime juice, finely diced red onion, and chopped cilantro to make the guacamole.
Place the corn tortilla in a clean skillet over medium heat and sprinkle half of the mozzarella cheese over it.
Arrange the steak slices on one half of the tortilla, top with the remaining cheese, and fold the tortilla in half.
Cook for 2-3 minutes per side until the tortilla is golden and crispy and the cheese is fully melted.
Serve the quesadilla hot with the fresh guacamole on the side.
