Bacon Cheddar Stuffed Potatoes
Oven-roasted potatoes stuffed with savory ground turkey and sharp cheddar, topped with crispy bacon and a dollop of cool Greek yogurt.
INGREDIENTS
0.5 medium Russet potato
4 oz lean ground turkey
1 slices center-cut bacon
0.5 oz sharp cheddar cheese
0.25 cup plain Greek yogurt
1 tbsp green onions
0.5 tsp garlic powder
0.25 tsp sea salt
0.25 tsp black pepper
0 tsp extra virgin olive oil
PREPARATION
Preheat your oven to 400°F (200°C).
Scrub the russet potato and prick it several times with a fork.
Rub the potato with olive oil and a pinch of sea salt, then bake for 45-55 minutes until tender.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy, then crumble and set aside.
In the same skillet, drain most of the fat and brown the ground turkey with garlic powder, sea salt, and black pepper until fully cooked.
Once the potato is done, slice it lengthwise and gently scoop out some of the centers into a bowl.
Mix the potato flesh with the cooked turkey and half of the cheddar cheese, then stuff the mixture back into the potato skins.
Sprinkle the remaining cheddar on top and return to the oven for 5 minutes until the cheese is melted and bubbly.
Top with a dollop of Greek yogurt, the crumbled bacon, and fresh green onions before serving.
