2.5 cups Cauliflower florets
10 spears Asparagus
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10-12 minutes.
During the last 5 minutes of the cauliflower steaming, add the asparagus spears to the steamer basket and cook until bright green and tender-crisp.
Transfer the steamed cauliflower to a bowl and mash thoroughly with minced garlic, half of the olive oil, and a pinch of sea salt until creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the remaining olive oil in a skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the flesh is cooked to your preference.
Serve the seared salmon over the garlic mashed cauliflower with the steamed asparagus on the side, finishing with a fresh squeeze of lemon juice.
