Baked Salmon with Steamed Green Beans and Garlic Mashed Potatoes
Oven-baked salmon fillet paired with garlic-infused mashed potatoes and tender green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
150g Russet Potato, peeled and cubed
60g Nonfat Plain Greek Yogurt
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the salmon fillet on the baking sheet, drizzle with olive oil, and season with a pinch of sea salt and black pepper.
Bake the salmon for 12-15 minutes until it flakes easily with a fork.
While the salmon bakes, place the cubed potatoes in a pot of boiling water and cook for 10-12 minutes until tender.
During the last 5 minutes of potato cooking, place a steamer basket over the pot and steam the green beans until bright green and crisp-tender.
Drain the potatoes and return them to the pot; add the Greek yogurt and minced garlic.
Mash the potatoes until smooth and creamy, adding a splash of water if needed to reach your desired consistency.
Plate the salmon alongside the garlic mash and steamed green beans, serving immediately with a fresh lemon wedge.
