Seared Salmon Fillet with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with vibrant steamed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.35 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
Pinch of Sea Salt and Black Pepper
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
While cauliflower is steaming, trim the ends of the green beans and add them to the steamer for the last 5 minutes of cooking.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a bowl and mash with a fork or immersion blender until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the steamed green beans with a fresh squeeze of lemon.
