Seared Salmon with Steamed Green Beans and Garlic Mashed Potatoes
Pan-seared salmon served with creamy garlic mashed potatoes and tender steamed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6 ounces Salmon Fillet
100 grams Yellow Potatoes, peeled and cubed
125 grams Fresh Green Beans, trimmed
3 tablespoons Nonfat Greek Yogurt
1 clove Garlic, minced
PREPARATION
Place the cubed potatoes in a pot of salted water and bring to a boil, cooking until fork-tender, about 12-15 minutes.
While potatoes cook, place green beans in a steamer basket over boiling water and steam for 5-7 minutes until vibrant and tender-crisp.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 3 minutes until golden.
Drain the potatoes and mash them with the Greek yogurt and minced garlic until smooth and creamy.
Plate the garlic mash alongside the steamed green beans and top with the seared salmon fillet.
