Salmon Cream Cheese Pasta with Cucumber
Pan-seared salmon tossed with al dente pasta in a velvety cream cheese sauce, brightened by crisp cucumber ribbons and fresh dill.
INGREDIENTS
6 oz Salmon fillet
0.75 oz Whole grain pasta
1.5 tbsp Cream cheese
1 cup Cucumber
1 tsp Olive oil
1 tbsp Lemon juice
1 tsp Dried dill
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a medium pot of salted water to a boil and cook the pasta until al dente according to package directions.
Season the salmon fillet with half of the salt and pepper, then sear in a pan with olive oil over medium-high heat until cooked through and flaky.
While the salmon cooks, use a vegetable peeler to slice the cucumber into long, thin ribbons, stopping when you reach the seeds.
Reserve two tablespoons of the hot pasta water, then drain the pasta and return it to the warm pot.
Stir the cream cheese, reserved pasta water, lemon juice, dried dill, and the remaining salt and pepper into the pasta until a smooth sauce forms.
Flake the cooked salmon into large pieces and gently fold it into the pasta along with the cucumber ribbons before serving.
