Pan-Seared Salmon with Lemon-Dill Sauce
Pan-seared salmon fillets served with a creamy lemon-dill yogurt sauce and crisp-tender roasted asparagus for a bright and refreshing finish.
INGREDIENTS
7 oz Salmon fillet
1 tsp Extra virgin olive oil
0.25 cup Plain Greek yogurt
1 tbsp Fresh dill
1 tbsp Lemon juice
0.5 tsp Lemon zest
1 clove Garlic
10 medium Asparagus spears
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the salmon fillet dry with paper towels and season both sides with half of the salt and pepper.
In a small bowl, whisk together the Greek yogurt, chopped fresh dill, lemon juice, lemon zest, and minced garlic to create the sauce.
Heat the olive oil in a stainless steel or cast-iron skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy and golden.
Flip the salmon and cook for another 3-4 minutes, or until the internal temperature reaches 145°F.
While the salmon cooks, steam or lightly sauté the asparagus with the remaining salt and pepper until bright green and tender.
Plate the salmon alongside the asparagus and spoon the creamy lemon-dill sauce over the fish before serving.
