Honey-Garlic Glazed Salmon with Quinoa and Asparagus
Pan-seared salmon glazed with a sticky honey-garlic sauce, served over fluffy quinoa and crisp-tender roasted asparagus.
INGREDIENTS
6 oz Salmon fillet
0.5 cup Cooked quinoa
1 cup Asparagus spears
1 tsp Extra virgin olive oil
1 tsp Honey
1 tbsp Coconut aminos
1 tsp Minced garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh lemon juice
PREPARATION
Season the salmon fillet evenly with sea salt and black pepper.
In a small bowl, whisk together the honey, coconut aminos, minced garlic, and lemon juice to create the glaze.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4 to 5 minutes until a golden-brown crust forms.
Flip the salmon and pour the honey-garlic glaze into the pan, using a spoon to baste the fish continuously for 3 minutes as the sauce thickens.
While the salmon finishes, steam or lightly roast the asparagus until it is bright green and tender.
Serve the glazed salmon over the warm quinoa with the asparagus on the side, drizzling any remaining pan sauce over the top.
