6 oz Yellowfin tuna steak
0.5 cup Cooked jasmine rice
0.5 cup Zucchini
0.5 cup Red bell pepper
1 tbsp Avocado oil
1 tsp Sesame seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Coconut aminos
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the sliced zucchini and chopped red bell pepper with 0.5 tbsp of avocado oil, half the sea salt, and half the black pepper.
Roast the vegetables for 15-18 minutes until they are tender and slightly browned at the edges.
Pat the tuna steak dry with a paper towel and season both sides with the remaining salt, pepper, and the sesame seeds, pressing them in to adhere.
Heat the remaining 0.5 tbsp of avocado oil in a cast-iron skillet over high heat until just starting to shimmer.
Sear the tuna steak for approximately 90 seconds per side for a medium-rare center, then remove from heat and let rest for 2 minutes.
Slice the tuna and serve it over the warm jasmine rice alongside the roasted vegetables, finishing with a drizzle of coconut aminos.
