Stir in the minced garlic and white parts of the scallions, cooking for 1 minute until fragrant.
Add the chopped kimchi and cooked brown rice, breaking up any clumps and tossing to combine.
Pour in the coconut aminos and toasted sesame oil, stir-frying for 3-4 minutes until the rice is slightly toasted.
In a separate small non-stick pan, fry the egg to your preference, ideally leaving the yolk runny.
Transfer the fried rice to a bowl, top with the fried egg, and garnish with the remaining green scallions.
