Sear the chicken for 3-4 minutes per side until a golden crust forms, then remove the chicken from the skillet and set it aside on a plate.
In the same skillet, add the ghee and allow it to melt completely.
Add the cremini mushrooms to the skillet and sauté for 5 minutes until they release their moisture and begin to brown.
Stir in the minced garlic, fresh thyme, and fresh rosemary, cooking for 1 minute until the aromatics are fragrant.
Place the seared chicken back into the skillet, nestling it among the mushrooms and herbs.
Transfer the skillet to the oven and roast for 10-12 minutes or until the chicken reaches an internal temperature of 165°F.
Garnish the dish with fresh parsley and the remaining salt and pepper before serving hot.
