Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with a side of tender steamed broccoli, finished with a squeeze of zesty lemon.
INGREDIENTS
6 oz Wild-Caught Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Broccoli Florets
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 tsp Grass-fed Butter
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the broccoli florets to the steamer basket to cook until bright green and tender-crisp.
While vegetables steam, pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for an additional 2-3 minutes until desired doneness is reached, then remove from heat.
Transfer the steamed cauliflower and garlic to a bowl or food processor. Add the Greek yogurt and grass-fed butter, then mash or blend until smooth and creamy.
Serve the seared salmon over the garlic cauliflower mash with the steamed broccoli on the side.
