Seared Salmon Fillet with Steamed Green Beans and Brown Rice
Pan-seared sockeye salmon served over a bed of nutty brown rice and tender-crisp green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7.5 oz Wild Sockeye Salmon Fillet
1/2 cup cooked Brown Rice
1.5 cups fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
1/4 tsp Sea Salt
1/4 tsp Black Pepper
PREPARATION
Cook the brown rice according to package instructions until tender and fluffy.
Trim the ends of the green beans and steam them over boiling water for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the fillet and cook for another 2-3 minutes until the salmon is just cooked through.
Plate the brown rice and green beans alongside the salmon and drizzle with fresh lemon juice before serving.
