Seared Salmon Fillet with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon served with creamy mashed sweet potatoes and steamed green beans. A final squeeze of fresh lemon adds a bright, zesty finish.
INGREDIENTS
7.4 oz Wild Atlantic Salmon Fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Avocado Oil
Sea salt and black pepper to taste
1 Lemon wedge
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 12-15 minutes.
While potatoes boil, trim the ends of the green beans and steam them over simmering water for 5-7 minutes until vibrant and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes until golden and crispy, then flip and cook for another 2-3 minutes until opaque throughout.
Drain the sweet potatoes and mash them thoroughly, adding a splash of the cooking water if needed for a smoother consistency.
Plate the salmon alongside the sweet potato mash and green beans, serving immediately with a fresh lemon wedge.
