PREPARATION

Heat the avocado oil in a medium skillet over medium-high heat and sear the chicken for 5-7 minutes per side until fully cooked and golden brown.
While the chicken cooks, prepare the dressing by whisking together the extra virgin olive oil, lemon juice, and the remaining dried oregano in a small bowl.
Once the chicken has rested for 3 minutes, slice it into thin strips or bite-sized cubes.
