Spicy Calabrian Chili Shrimp Linguine
Sautéed shrimp and al dente linguine tossed in a fiery Calabrian chili oil with blistered cherry tomatoes and a bright, zesty squeeze of lemon.
INGREDIENTS
7 oz Shrimp
1.5 oz Dry linguine
0.5 tbsp Extra virgin olive oil
1 tbsp Calabrian chili paste
2 clove Garlic
0.5 cup Cherry tomatoes
1 tbsp Fresh parsley
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the linguine according to package directions until al dente.
While the pasta cooks, peel and mince the garlic and halve the cherry tomatoes.
Heat the olive oil in a large skillet over medium heat and add the garlic and cherry tomatoes, sautéing until the tomatoes begin to blister.
Stir in the Calabrian chili paste and add the shrimp to the skillet, seasoning with sea salt and black pepper.
Cook the shrimp for 2-3 minutes per side until pink and opaque.
Reserve 0.25 cup of pasta water, then drain the linguine and add it directly to the skillet with the shrimp.
Toss everything together with the lemon juice, fresh parsley, and a splash of pasta water to create a light sauce before serving.
