Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild sockeye salmon served over brown rice with a side of snappy garlic-infused green beans.
INGREDIENTS
6 ounces Wild Sockeye Salmon
0.5 cup Cooked Brown Rice
1.5 cups Green Beans
1 teaspoon Avocado Oil
2 cloves Garlic
0.5 teaspoon Sea Salt
0.25 teaspoon Black Pepper
PREPARATION
Pat the salmon fillets dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a large non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust develops.
Carefully flip the salmon and continue cooking for 3 to 4 minutes until the fish flakes easily with a fork.
Transfer the salmon to a plate and add the minced garlic and green beans to the skillet with two tablespoons of water.
Sauté the beans for about 5 minutes until they are tender-crisp and the water has evaporated.
Portion the cooked brown rice onto a plate and top with the seared salmon and a side of the garlic green beans.
