5.8 oz Chicken Breast
0.6 cup cooked Brown Rice
1 cup Broccolini
1.5 tsp Olive Oil
1 wedge Orange (juiced)
1 tbsp Lemon juice
2 tbsp sliced Red Onion
1 tbsp fresh Cilantro
1 tsp fresh Dill
PREPARATION
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the juice and zest from the orange and lemon, chopped cilantro, dill, and half of the olive oil.
Place the chicken breast in a shallow dish and pour half of the citrus-herb mixture over it, letting it marinate for at least 10 minutes.
Toss the broccolini and sliced red onion with the remaining olive oil and a pinch of sea salt on a large sheet pan.
Move the vegetables to one side of the pan and place the marinated chicken on the other side.
Roast in the oven for 18-22 minutes, or until the chicken reaches an internal temperature of 165°F and the broccolini is tender with charred edges.
While the chicken roasts, warm your pre-cooked brown rice.
Slice the chicken and serve it over the fluffy brown rice alongside the roasted broccolini and onions, drizzling any remaining pan juices over the top.
