Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky sautéed green beans and a creamy sweet potato mash, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Wild Salmon Fillet
125g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1/2 tsp Ghee
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until tender.
Drain the sweet potatoes and mash them with the ghee and a pinch of sea salt until smooth and creamy.
While potatoes cook, heat half of the olive oil in a skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the edges are crisp and the center is just opaque.
In a separate small pan, heat the remaining olive oil and sauté the green beans with minced garlic for 5-6 minutes until bright green and tender-crisp.
Plate the salmon alongside the sweet potato mash and green beans, finishing the dish with a fresh squeeze of lemon juice.
