Toss broccoli florets and sliced bell peppers with 0.25 tbsp of avocado oil, sea salt, and black pepper on the baking sheet.
Roast vegetables for 15-20 minutes until tender and slightly charred.
In a bowl, toss tofu cubes with nutritional yeast and garlic powder until evenly coated.
Heat the remaining 0.5 tbsp of avocado oil in a non-stick skillet over medium-high heat.
Sear tofu for 3-4 minutes per side until a golden-brown crust forms.
Add edamame to the skillet for the last 2 minutes to warm through.
Drizzle tamari over the tofu and edamame, tossing to glaze.
Serve the crispy tofu and edamame alongside the roasted vegetables.
