Pat the chicken breast dry and rub it thoroughly with the garlic-herb oil mixture.
Chop the bell peppers and carrots into bite-sized pieces.
Toss the broccoli, peppers, and carrots with the remaining olive oil, sea salt, and black pepper on the prepared baking sheet.
Place the chicken breast in the center of the pan, nestled among the vegetables.
Roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender and slightly caramelized.
Remove from the oven and drizzle everything with fresh lemon juice before serving.
