Pan-Seared Tofu with Roasted Vegetables
Crispy pan-seared tofu cubes tossed in savory nutritional yeast and served with oven-roasted vegetables for a vibrant, protein-packed meal.
INGREDIENTS
14 oz Firm tofu
3 tbsp Nutritional yeast
1 tbsp Extra virgin olive oil
1 cup Broccoli florets
1 cup Red bell pepper
1 tbsp Tamari
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Toss broccoli florets and sliced red bell pepper with half of the olive oil, sea salt, and black pepper.
Roast the vegetables for 15-20 minutes until tender and slightly charred.
While roasting, press the tofu to remove excess moisture and cut into 1-inch cubes.
In a medium bowl, toss the tofu cubes with nutritional yeast and garlic powder until evenly coated.
Heat the remaining olive oil in a large non-stick skillet over medium-high heat.
Add the tofu cubes to the skillet and sear for 3-4 minutes per side until golden brown and crispy.
Drizzle the tamari over the tofu in the last minute of cooking, tossing to glaze.
Serve the crispy tofu alongside the roasted vegetables.
