Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with garlic-infused green beans and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
1/3 cup Cooked Brown Rice
1.5 cups Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with paper towels and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crisp.
Flip the salmon and cook for an additional 2 to 3 minutes until the fish is opaque and flakes easily with a fork.
While the salmon cooks, place the green beans in a separate small pan with the minced garlic and two tablespoons of water.
Cover and steam the green beans over medium heat for 3 to 4 minutes until they are tender-crisp and the water has evaporated.
Plate the warm brown rice and top with the seared salmon.
Serve the garlic green beans alongside and finish the entire dish with a fresh squeeze of lemon juice.
